Tortillas
- Flour (2 cups)
- Corn Flour (1 cup)
- Hot Water (1cup)
- Olive Oil (1 tbsp.)
- Salt (pinch)
The tortillas I used were homemade, because I think there is a huge difference. I personally prefer corn tortillas. However, corn flour is difficult to process, I found out that it is best to mix normal flour and corn flour. Mix the ingredients in a bowl. Then, cut the dough into small portions. Roll out each thinly with a a rolling pin. Make sure that they are enough floured and turn the dough often so that it will not stick to the kitchen countertop. Heat each tortilla in a non-stick pan without any oil. As soon as bubbles appear, turn the tortilla. The tortilla should have lightly roasted spots.
Salsa
- Tomatoes (about 5)
- Jalapenos
- 1 Onion
- Garlic
- Cilantro
- Vinegar (1 tbsp.)
- Salt & Pepper
- Cumin (pinch)
Salsa is one of the most important ingredients for good Mexican food. Pour boiling water over the tomatoes. Then, peel off the skin. Cut the toamtoes in very small cubes. Add a finely chopped onion and all other ingredients. A pinch of cumin adds an authentic mexican taste.
Grilled Chicken
I marinated the chicken fillet with pepper, salt, paprika, cumin and olive oil. You can grill it on the barbecue or in a griddle pan and cut it into strips.
Black Beans
Just heat canned black beans and season according to your personal taste.
Guacamole
- Avocados (1-2)
- Salt, Pepper
- Lemon
Just blend all ingredients and squeeze some lemon in the guacamole. This will not only give it a good taste, but prevent it from getting a brown colour too soon.
