What would a summer be without berries? There is not much time left that we can enjoy these wonderful fruits, so I decided to create a cake that is the personification of summer.

Leavened Dough
- 350 g Flour (1/2 spelt flour and 1/2 normal flour)
- 20 g Yeast (fresh)
- 100 ml Milk
- 50 g Sugar
- Vanilla Sugar (1 package)
- Salt (pinch)
- 1 Egg
- 50 g soft Butter
For the dough
First slightly heat the milk. Then, pour the flour in a bowl and form a whole, in which you crumble the yeast, 2tsp. sugar and 5 tbsp. of the warm milk. Stir with a bit of the flour from the side, cover the bowl and leave it on a warm place for about 20 minutes. Then, add the rest of the ingredients and mix it to a dough that is not too sticky, you might have to add some more flour or milk. If it has the right consistency, cover the dough again and leave it on a warm place for about 30 minutes. The dough should rise to about twice it`s initial size. Roll the dough out and pour it in a cake-pan. Don`t roll it out too thinly, so that you can form it with your hands in the pan and get a nice cake rand.
Topping
For a topping I used nectarines and as many berries I could find. I started with sliced nectarines. Then, I added raspberries, blueberries, blackberries and redcurrants. Sprinkle some brown sugar on top and bake it in the oven for about 25-30 minutes. When the cake is done, let it cool and decorate it with icing sugar.
With the aromatic fruits and the light leavened dough, you can literally taste a piece of summer.
