Huevos Rancheros

IMG_2620“Huevos Rancheros” (Rancher`s eggs) is a popular Mexican breakfast, which is traditionally served to farm laborers and ranchers. The regular breakfast egg is spiced up in Mexican style. Since it has become popular beyond the borders of Mexico, many different variations of this dish have been created – altering what kind of eggs, tortillas or sauce is used. I chose a variant with flour tortillas, fried eggs, salsa, refried beans and avocados.

Instructions

In general, I would advise to make Huevos Rancheros when you have cooked Mexican the day before and you can just use the leftovers. I will share, however, also a quick version for the beans, salsa and tortillas.

Beans

For the quick version, you can use canned refried beans or mash heated kidney beans with a fork. If you want to make homemade refried beans, braise one chopped onion and one chopped garlic clove in olive oil. Add a can of kidney beans and a peeled chopped tomato. Season with some salt, a pinch of cumin, cilantro, chili powder and a bay leaf. Add about a half cup of water and let cook for about 20 minutes. Remove the bay leaf and puree the beans.

Salsa

The same is for the salsa. You can use canned salsa or simply use some chopped tomatoes for the quick version. However, I will also share a recipe for Chipotle Salsa: Roughly chop 8 dried tomatoes and cook in 150 ml water for some minutes. Blend the cooked dried tomatoes with one can of tomatoes,  2-3 canned Chipotle Peppers, 1 chopped onion and 1 chopped garlic clove. Heat this mixture with 2 tbsp. vinegar, some salt, 1 tsp. oregano, 1/2 tsp. cinnamon 15-30 minutes in a pot.

Tortillas

You can buy tortillas or you can easily make them at home. For 10 Mini Tortillas mix about 1 1/2  cups of flour with a half cup of warm water, a dash of olive oil and a pinch of salt. Test for the right consistency, if the dough is too sticky or too dry, add more water or flour. Cut the mass into small portions and roll them out to mini tortillas. Heat one after the other in a pan (without oil) on both sides until they have light brown spots.

Fry the tortilla in some oil. Add refried beans, cheddar and some salsa. In a separate pan, fry the eggs. When they are done, add them on top of the tortillas. Scatter the Huevos Rancheros with a chopped avocado. As a finish, you can sprinkle some cilantro and squeeze a lime.
