Easter is coming up. The fact that spring has arrived and our house is decorated with yellow flowers, might have something to do with me baking a lemon cake today. I had always wondered how to get a sugar icing that is not transparent, but has a rich white color – you will find the instructions below.
Ingredients
- 500 g flour
- 1 package baking soda
- 250 g sugar
- 250 g butter
- 1 package vanilla sugar
- 4 eggs
- grated skin of 2 organic lemons
- some lemon juice
- some milk
Mix the sugar and vanilla sugar with butter. Then, slowly pour in the eggs. Next, add the flour mixed with baking soda. Grate the skin of 2 organic lemons and add it to the mixture with some lemon juice. The consistency of the dough should be slightly sticky – you might have to add some milk. Bake the cake for about 1 hour until it has turned golden yellow.
Sugar Icing
To get a sugar icing with a rich white color, use milk instead of water. Press 1 package of powdered sugar through a sieve. Mix it with little milk and add some lemon juice.
