Summery Berry Tartlets

Mixed Berry Tartlets

The last weeks of summer have embarked. These Berry Tartlets are a nice fruity snack to enjoy the final days of berry season in September. I used an old recipe from my grandmother for a fluffy cake base. It is a very simple, but really tasty recipe. You can use the ingredients for 7 tartlets or one cake base.

Ingredients

For the dough:

  • 125 g butter
  • 125 g sugar
  • 2-3 eggs
  • 1 Lemon
  • 200g flour
  • 2 tsp. baking powder
  • Some milk

Toppings:

  • Raspberries, blueberries, blackberries
  • Gelatin
  • 4 tsp. strawberry jelly

 

Instructions

Stir the butter and sugar in a bowl until foamy. Next, add the eggs and a freshly pressed lemon. Mix the flour with baking powder and slowly pour it into the bowl. Continue stirring and add a little bit of milk until the dough has a slightly sticky consistency. Grease the baking tins and evenly pour the dough into the forms. Bake the tartlets in the oven for about 20-25 minutes until golden yellow – and let them cool.

For the topping, prepare 1 package of cake glaze according to the instructions and add 4 tbsp. of strawberry jelly. Stir in the berries and quickly spread the mixture on top of the tartlets. You can enjoy the berry tartlets warmed up with some vanilla ice cream.
