Coming from a small town in Bavaria, my grandmother used to cook warming soups that filled the belly just by the tasty smell in the air. Since the days have been getting brisk and I am still curing a little cold, it was the perfect day to cook two of my favorite recipes, which my grandmother used to make for us  – A Pancake Soup and a “Grießnockerl” Soup (Semolina Dumplings). Both are traditional German dishes, which are simple, but highly appreciated in families. My belly was filled and so was the house with a tasty smell, just like in old days.img_8117

“Pancake Soup”

Ingredients

  • 2 eggs
  • 1/4 l milk
  • 100 g flour
  • Salt
  • Chives (finely chopped)

Instructions

Pancake soup is a very simple, nevertheless a very tasty recipe that you can cook anytime. Start by mixing the flour with milk. Next add the add eggs, some salt and the chives. Pour some of the dough with a scoop into a pan and fry in portions till golden brown. When the pancakes have cooled, roll them up closely and cut them into thin slices. For the vegetable broth you can either use the recipe for a homemade broth, which I posted earlier or simply use a stock cube. Sprinkle the cut pancakes into the hot broth before serving. I like to top the soup with some fresh chives.

“Grießnockerl Soup”

(Semolina Dumplings)

Ingredients

  • 30 g soft butter
  • 1 egg
  • 80 g Semolina
  • Salt
  • Pinch of nutmeg

Instructions

“Grießnockerl” is the Bavarian word for Semolina Dumplings, which are the basic ingredient for the soup. The recipe is also very quick, before you start; however, make sure you take the butter from the fridge so that it has room temperature. Mash the soft butter with a fork. Add the rest of the ingredients and mix well. Leave the mixture for about 3o minutes so that the consistency gets firmer. Use 2 teaspoons to form small Semolina Dumplings – “Grießnockerl”. Let the dumplings simmer in the broth for about 25 minutes. If you want to add some vegetables, you can cook chopped mushrooms or carrots with the soup. Sprinkle some fresh herbs like parsley or chives and you are ready to serve.
