My basil did not survive these winter days, but this does not stop me from cooking my favorite dish – Fresh Pasta. This is a simple recipe for a spicy Pasta Arrabbiata, which I absolutely love. You can add toppings like black olives, fresh herbs or Parmesan Cheese according to your taste. Served with some pasta al dente – All I can say is Viva Italia!

Ingredients
- Canned Tomatoes
- Garlic Clove
- Onion (1/2)
- Oregano (Dried)
- Cooking cream
- Mushrooms
- Basil Leaves (If available)
- Chili Powder (or fresh chili)
- Salt, Pepper, pinch of sugar
Instructions
Finely chop the onion and garlic clove and fry them on medium heat in some olive oil. Add the chopped, canned tomatoes. Season with salt, pepper, a pinch of sugar, oregano and chili powder. Let the sauce cook for at least 30 minutes. Puree with a mixer and pour in a dash of cream. Cut the mushrooms, some fresh basil leaves and add them to the sauce. Let it cook for another 10 minutes. Finally taste if any more seasoning is needed and sprinkle some Parmesan Cheese before serving.
