This fresh salad is the ultimate spring kick-off. Crisp lettuce, avocados and cucumbers are topped with shrimps & a divine coconut-lime dressing. Rich in taste and super healthy – My new no. 1 salad.
Ingredients
- Coriander
- Avocado
- Cucumbers
- Shrimps
- Spinach Leaves
- Parmesan Cheese
Sauce
- Coconut Milk
- Lime Juice
- Garlic (small piece)
- Soya Sauce
Instructions
Chop the cucumbers avocados, coriander and add them into a bowl. Season the shrimps with salt, pepper and a pinch of chili powder, shortly fry them in a pan. Next, prepare the dressing. Blend a small piece of garlic (use garlic powder for a less intense taste) with the juice of 2 limes, 2 tbsp. soya sauce and coconut milk. Use some spinach leaves as a decoration and fill the chopped vegetables in the bowl. Season with coconut dressing, some salt & pepper. Finally, top the salad with shrimps and some Parmesan cheese.
