Summer Party Finger Food-Vietnamese Spring Rolls

Vietnamese Spring Rolls made it to the top of my “Best Summer Food” list. Super thin rice paper is filled with lots of fresh vegetables, shrimps or rice. Fun to roll, and dipped into soy sauce or a homemade sweet-sour sauce (see below) – Spring Rolls are the perfect finger food for summer parties!


  • Rice Paper
  • Cucumbers
  • Carrots
  • Zucchini
  • Bellpeppers
  • Rice or Rice Noodles
  • Spring Onions
  • Shrimps
  • Iceberg lettuce


Finely chop the letters into thin slices. Dip the rice paper in a saucepan filled with hot water for about 5 sec. Moisten your hands with water and fill the rice paper with vegetables of your choice. Fold in the corners first and narrowly roll up the spring roll.

Spicy Sweet-Sour Sauce

The best part is dipping the spring roll into sauce. You can use soy sauce or a homemade spicy sweet-sour sauce – so delicious with the fresh and crispy vegetables!

  • 1 red paprika
  • 1 garlic clove
  • 1 fresh red Thai chili
  • 10 tbsp. rice vinegar
  • 8-10 tbsp. sugar
  • 1 cup water (250 ml)

Finely chop the paprika, garlic and chili. Grind everything with a mortar. Cook the ingredients in a small pot with 1 cup of water, vinegar & sugar for about 30 minutes.
