Farmer`s markets are the best place to shop for seasonal and local foods. I love talking to the vendors, the smell of fresh fruits, flowers, vegetables & herbs. – Like a small adventure for the senses! Today, I took a stroll to the local farmer`s market and bought fresh veggies for a homemade garden salad. I added a Mediterranean touch with some sweet figs, fried feta cheese (so delicious!) and topped everything with a homemade honey-mustard dressing. I hope you enjoy this nourishing farmer`s market salad!
Fresh Vegetables
from the Local Farmer `s Market
Ingredients Salad
- Green lettuce
- Tomatoes (Red, orange, green)
- Local arugula
- 1 bell pepper
- 1 fig
- Pickled small red bell peppers
- Cress
- Chopped parsley
Honey-Mustard Dressing
- 1 tbsp. mustard
- 2 tbsp. white wine vinegar
- 1 1/2 tbsp. olive oil
- 1 tbsp. balsamic vinegar
- 1 tbsp. water
- 1 tsp. honey
- Salt & pepper
Fried Feta Cheese
- 2 Slices of Feta Cheese
- 1 Egg
- Some Flour
- Olive oil for the pan
This is one of my favorite recipes that shows how tasty simple dishes can be. You need 2 slices of feta cheese (thumb-width), I bought fresh ones from the farmers market, but you can also use a packaged feta. Use 2 low bowls, fill one with some flour and the other with a beaten egg. Dip the feta cheese first in egg, then in flour and fry it on both sides in a pan (with some olive oil) until golden brown – about 3 minutes on each side.
Prepare the salad by putting all veggies on a plate. Add the figs and the fried feta cheese. Before serving, sprinkle some fresh cress and top the garden salad with homemade honey-mustard dressing.
