This Zucchini-Curry Soup is one of my favorite simple recipes. Quick to make, but super tasty! I have made it many times, because I love the flavorful, subtle spiciness of the curry. The soup is nutritious, but light at the same time. – The perfect meal after a long day!

Ingredients

  • 2 Zucchinis
  • 1 Small Onion
  • 1 Garlic Clove
  • 1 tbsp. Flour
  • 0.5 – 0.75 l Water
  • 100 ml Milk
  • 1 tbsp. Curry

Instructions

Chop the small onion, garlic clove and zucchinis. Braise the onions and garlic in some olive oil together with the zucchinis. Add a tablespoon of flour and season with curry, salt & a generous amount of pepper. Pour in the water, some milk and let the vegetables cook until they are soft. Fill everything into a mixer and puree to a fine soup.

Taste the soup and add more seasoning if necessary. Before serving, you can top the soup with sunflower seeds and fried bread crumbs. I also love to sprinkle chopped coriander for some extra freshness!
