“Butta La Pasta” is a saying that many Italian wives & mothers have heard, meaning “Put the pasta in the boiling water, I`m almost home!” It is also the name of my favourite new pasta eatery, where I enjoyed the perfect fall pasta. Homemade, simple, with fresh ingredients, just how I love cooking! Homemade, fresh & seasonal

There are not too many restaurants, where you feel like you are eating at home. When you walk into “Butta La Pasta”, a newly opened small pasta eatery in my hometown, it feels like walking into your mother`s kitchen. The daily menu written on a blackboard, is offering 3-4 seasonal varying dishes, each one freshly cooked with local & organic ingredients by Rosa, the owner of the cozy Italian eatery.

I choose the fall pasta with chanterelles & cherry tomatoes. Her husband gets some fresh mushrooms from the vegetable seller across the street – and Rosa prepares the meal with love. I watch her sauté the fresh vegetables and making homemade spaghettis with a pasta machine. It seems like she is only cooking for me and that`s exactly how the pasta tastes: Fresh and flavourful! Wild flowers, beautiful ceramic bowls filled with homemade bread and Parmesan cheese decorate the tables of the tastefully designed restaurant. Before I leave, I ask Rosa for the recipe. As I thank her for the delicious pasta, I almost forget to pay – but I guess that happens when you feel at home.

Pasta with Love

Ingredients

  • Spaghetti
  • Cherry Tomatoes (cut in halves)
  • Chanterelles
  • Spring Onions
  • Butter
  • Olive oil
  • White wine
  • Pepper

Instructions

  1. Cook the spaghetti al dente in salted, boiling water.
  2. Heat some butter & olive oil and sauté the mushrooms, cherry tomatoes & spring onions.
  3. Season the vegetables with salt & pepper.
  4. Deglaze with white wine and stir the spaghetti with the vegetables.
  5. Finally, sprinkle some parmesan cheese before serving.
