The Holidays are just around the corner. Last preparations for Christmas are underway, presents are wrapped and tables are set. This festive holiday salad is a healthy, but hearty addition to any Christmas menu. Nuts, cranberries and feta cheese bring the colours of Christmas to the table. Topped with a fine orange dressing and savoury homemade croutons, enjoy this hearty winter salad – Happy & Healthy Holidays!
HOLIDAY SALAD
Ingredients (for 2 persons)
- Kale (3 large branches)
- Mixed Salad
- Dried Cranberries
- Feta Cheese (200 g)
- Walnuts (chopped)
- Honey-Orange Dressing (see below)
- Bread Croutons (see below)
Finely chop the kale salad and add it to the mixed salad into a big bowl. Sprinkle some dried cranberries. Cut the feta cheese into small pieces and crumble it into the salad. Coarsely chop the walnuts and add them as well. Prepare the dressing (as described below) and mix well with the salad. Fill the salad into medium-size bowls. In a final step, fry the croutons in a pan (as described below) and sprinkle them on top.
Honey-Orange Dressing
- 3 tbsp. Olive Oil
- 2 tbsp. White Balsamic Vinegar
- 2 tbsp. Apple Vinegar
- Salt & Pepper
- 1 tsp. Honey
- 1 tsp. Mustard
- Freshly pressed orange juice (1/2 orange)
For the dressing, mix all ingredients in a small bowl. Stir with a fork well to a smooth dressing.
Homemade Bread Croutons
- Olive Oil
- Baguette bread
- Garlic powder
- Dried Italian Herbs
Cut the baguette into finger width slices. Next, heat some olive oil in a pan and fry the bread until golden brown (with some darker sports). Cut the bread slices into cubes, sprinkle some garlic powder and Italian herbs.
