undayz are meant to be relaxing. There is no better time for a day of baking or a good book! Indulge in a wonderfully smelling homemade cake, like I did today with this tasty cinnamon swirl. I am not sure if it is really a swirl, but that`s how I named this soft leavened dough.
By the way, I am so inspired by people all over the world marching for Womens & Human Rights at this moment. In the darkest times the stars are shining bright, like Rosa Parks when she was sitting in a bus on her way back home from work and she refused to give up her seat to a white person. I found her story along with other inspiring women in the book “Good Night Stories for Rebel Girls”. – Sundays truly are for baking and good books!
Ingredients
- 50 g sugar (1/4 cup)
- 370 g flour (1 2/3 cups)
- 20g fresh yeast (1/2 cube)
- 120ml milk
- 60 g butter
- 2 eggs
- 1/2 tsp. salt
Filling
- 2 tsp. cinnamon
- 60 g butter (2 oz.)
- 150 g sugar
Instructions
- Put the flour in a big bowl and make a crater in the middle. Sprinkle the crumbled yeast into the center and add a pinch of sugar.
- Heat the milk until lukewarm and mix the yeast with about 50 ml of the milk to a thick pulp. Leave covered with a kitchen towel for about 15 minutes.
- Add the butter to the rest of the milk and let it melt.
- Beat the 2 eggs, a pinch of salt and the butter-milk mixture to a smooth dough. Cover the bowl with a kitchen towel and leave again for about 60 minutes.
- In the meantime, prepare the filling. Blend the cinnamon, soft butter and sugar with a fork to a creamy mixture.
- Roll out the dough to a rectangle. And cut it lengthwise into 4 pieces. Spread the cinnamon mixture on the dough and layer the pieces on top of each other. Cut into squares and fill them upright into a greased loaf pan.
- Cover with a kitchen towel and leave one last time for 45 minutes.
- Preheat the oven to 175 °C (350 °F).
- Brush the cake with some milk and bake in the oven for 45 minutes.
