Time to warm up for the super bowl! This spicy Mexican bowl brings fire to any party. Easy to make and a delicious snack to cheer for this year`s gigantic sports event!
Ingredients (4 persons)
- Canned Tomatoes (1 can about with 400 ml)
- Kidney Beans (1 can)
- 1 onion (chopped)
- 1 garlic clove (chopped)
- 1 carrot (chopped)
- piece of celery (chopped)
- 1 red, 1 yellow and 1 green bell pepper (chopped)
- 1 chilli pepper (chopped)
- Piece of leek (chopped)
- 1 zucchini (chopped)
- Corn (1 can about 300 g)
- 2 spring onions
- Fresh coriander
- 1 tsp. ground coriander & ground cumin
- 1 Bay Leaf
- 0.75 l water

Instructions
- Sauté the chopped onion, garlic, carrot, chilli pepper & celery in olive oil and season with ground coriander and cumin.
- Add the canned tomatoes and bay leaf. Fill up the vegetables with 0.75 l of water and let it cook for 20 minutes.
- Next add the rest of the vegetables: chopped bell peppers, beans, corn, zucchini, leek and spring onions.
- Let cook everything together for another 5 minutes. Season to taste with salt, pepper & chilli powder.
- Serve in a big bowl with nachos. Finish by sprinkle some coriander, jalapeños and cheddar cheese on top.
Option: Meat lovers can sauté the vegetables with 200 g round beef.
