I am wishing everyone a spooky Halloween night. With these dark chocolate cupcakes, I am prepared for “Trick or Treat” – Hopefully this spooky treat will bring a smile to some children`s eyes.

Ingredients (Servings: 18)
- 3/4 cup natural cocoa powder
- 2/3 cup boiling water
- 1 cup buttermilk
- 1 3/4 cups (280g) flour
- 2 tsp. baking soda
- Pinch of salt
- 12 tbsp. (185 g) butter
- 250 g sugar
- 1/2 cup (100g) brown sugar
- 3 eggs
- 2 tsp. vanilla extract
Preheat the oven to 180°C (350°F). In a bowl, whisk the cocoa powder into the boiling water. When it has cooled to lukewarm, add the buttermilk. In another bowl, mix together the flour, baking soda & salt.
Beat together the butter, granulated sugar and brown sugar with an electric mixer on medium speed until combined. Add the eggs one at a time, beating well and finally add the vanilla extract. Reduce the speed to low and add the flour mixture in 3 additions, alternating with the cocoa mixture, beginning and ending with the flour mixture. The consistency of the dough should be pretty liquid (don`t add additional flour).
Divide the batter among the prepared muffin cups, filling each almost full. Bake for about 15-20 minutes until the cupcakes are puffed, a toothpick inserted into the center of a cupcake should come out clean. Let the cupcakes completely cool and use a knife to spread the cream cheese frosting on top of the muffins. Get creative with the Halloween decoration, using Oreo Cookies, candies and icing.
