Today was one of these pancake craving mornings, when I wake up and the first thing I think about is a delicious pancake. I had always been longing for small American pancakes that are thicker, but at the same time light and fluffy. With this recipe, I finally found the key to achieve my pancake mission.
Ingredients
- 2 cups flour
- 3 tsp. baking soda
- 3 cups buttermilk
- a dash of mineral water
- 2 eggs
- pinch of salt & sugar
Instructions
Mix the flour with the baking soda and add the buttermilk. Next, sightly beat 2 eggs and add them to the mixture. I only add a pinch of salt and sugar, to keep sugar levels low. Lastly, add a dash of mineral water to get a soft & light consistency. Bake the pancakes in portions on medium heat. In between, carefully clean the pan with a kitchen paper to remove leftovers. Sweeten with berries & maple syrup and enjoy
