M I L C H R E I S
You would not guess with which simple means you can create a homemade rice pudding that tastes better than anything you can buy at a store. The sweet treat that is called “Milchreis” in Germany is popular from young til old. With a splash of coconut milk, the mixture of vanilla, rice and a subtle coconut aroma will melt on your tongue.
Ingredients (for 2 persons)
- 130 g “Milchreis” (or risotto rice)
- 1 vanilla bean
- 350 ml milk
- 150 ml coconut milk
- A pinch of salt
- 2 tbsp. sugar
Heat the milk, coconut milk and rice in a pot with a pinch of salt. Add the fresh vanilla extract including the vanilla pod (for extra vanilla aroma) and quickly bring the mixture to boil. Then, reduce the heat and let it simmer for 25 minutes whilst stirring. When the rice pudding is done, remove the vanilla and add the sugar. Fill the “Milchreis” into a bowl. Before serving, top the sweet dessert with berries (fresh or warmed up frozen ones), pecan nuts and coconut flakes.
