Spring days are some of the most beautiful days of the year. Streets are turning into blossomed avenues, parks are getting lively and you can feel an optimistic spirit all over. Finally waking up to blue skies again and celebrating garden parties with friends – maybe with the fruity raspberry dessert below. Have wonderful spring days!
Ingredients (for 6 portions)
- 1 Vanilla pod
- 400 g raspberries
- 350 g mascarpone
- 150 g quark
- 60 g sugar
- 3 tbsp. raspberry brandy
- 100 g meringues (small)
- Cut the vanilla pod in two halves and remove the vanilla extract. Mix the vanilla with mascarpone, sugar and quark. Puree one third of the raspberries with raspberry brandy and mix the sauce with the rest of the raspberries.
- Fill 6 small glasses, alternately with mascarpone, raspberry mixture and meringues. Add meringues and raspberries as a topping and leave the dessert in the fridge for some time before serving.
