- 100 g flour
- 1 tbsp. cacao powder
- 4 eggs
- 120 g sugar
- 340 g cool whip
- Strawberries (about 12)
- 4 tbsp. confectioner`s sugar
Toppings: Strawberries, Berry Mixture, Blueberries and Mint Leaves
- For the strawberry filling, blend about 12 strawberries in a mixer. In a medium bowl, fold the strawberry sauce into the cool whip and sift in the icing sugar, until everything is well mixed. Leave the strawberry cream in the fridge and start preparing the dough.
- For the cake, preheat the oven to 200 °C. Mix the flour and the cacao powder. Separate the egg whites and egg yolks. Beat the egg whites until stiff and mix in the sugar. Carefully fold in the egg yolks with a spoon. Sift in the flour mixture and carefully fold it in. Fill the dough into a baking form and bake in the oven for 30-40 minutes. Let the cake cool and carefully cut it into 3 separate layers.
- Spread the strawberry cream on the first layer and add the second layer on top. Repeat with the next layer and add the top of the cake. Generously spread strawberry cream on the surface of the cake. Decorate the top with berries, strawberries and garnish with some a mint leave.
